Ingredients
- 1 medium red onion finely chopped
- 2 cloves garlic minced
- 1/2 cup fresh parsley chopped
- 1/2 cup fresh cilantro chopped
- 1/4 cup preserved lemon rind finely chopped (pulp removed)
- 1/2 cup extra virgin olive oil
- 2 tbsp fresh lemon juice
- 1/2 tsp ground cumin
- 1/4 tsp paprika
- Pinch red pepper flakes optional

Instructions
- Finely chop the red onion, mince the garlic, and chop the fresh parsley and cilantro. Remove the pulp from the preserved lemon and finely chop the rind.
- In a medium bowl, combine the chopped red onion, minced garlic, chopped parsley, chopped cilantro, and finely chopped preserved lemon rind.
- Add the extra virgin olive oil, fresh lemon juice, ground cumin, paprika, and red pepper flakes (if using) to the herb mixture.
- Stir vigorously to combine all ingredients thoroughly. Season with salt and black pepper to taste.
- Let the dressing sit for at least 10-15 minutes before serving to allow the flavors to meld.
- Serve immediately as a dressing for salads, a marinade for grilled meats or fish, or as a flavorful condiment. Store any leftovers in an airtight container in the refrigerator for up to 5 days.
Notes
