Ingredients
- 2 cup cooked chicken shredded or diced
- 1/4 cup red onion thinly sliced
- 1/4 cup fresh cilantro chopped
- 2 tablespoon fresh mint leaves chopped
- 1 tablespoon fish sauce
- 2 tablespoon fresh lime juice plus extra for seasoning
- 1 teaspoon sugar
- 1/2 teaspoon red chili flakes or to taste
- 1/4 teaspoon kosher salt or to taste

Instructions
- Prepare your cooked chicken by shredding or dicing it. Place the chicken in a large mixing bowl.
- Add the thinly sliced red onion, fresh chopped cilantro, and fresh chopped mint leaves to the bowl with the chicken.
- In a separate small bowl, whisk together the fish sauce, 2 tablespoons of fresh lime juice, sugar, and red chili flakes until the sugar dissolves. This is your main dressing.
- Pour the prepared dressing over the chicken and herb mixture.
- Give that a quick mix.
- Taste the salad. Adjust the seasoning with a bit of kosher salt and a splash more fresh lime juice if desired.
