Ingredients
  

  • 2 cup cooked chicken shredded or diced
  • 1/4 cup red onion thinly sliced
  • 1/4 cup fresh cilantro chopped
  • 2 tablespoon fresh mint leaves chopped
  • 1 tablespoon fish sauce
  • 2 tablespoon fresh lime juice plus extra for seasoning
  • 1 teaspoon sugar
  • 1/2 teaspoon red chili flakes or to taste
  • 1/4 teaspoon kosher salt or to taste
  • lettuce leaves for serving (optional)

Instructions
 

  • Prepare your cooked chicken by shredding or dicing it. Place the chicken in a large mixing bowl.
  • Add the thinly sliced red onion, fresh chopped cilantro, and fresh chopped mint leaves to the bowl with the chicken.
  • In a separate small bowl, whisk together the fish sauce, 2 tablespoons of fresh lime juice, sugar, and red chili flakes until the sugar dissolves. This is your main dressing.
  • Pour the prepared dressing over the chicken and herb mixture.
  • Give that a quick mix.
  • Taste the salad. Adjust the seasoning with a bit of kosher salt and a splash more fresh lime juice if desired.
  • Serve immediately in crisp lettuce cups, over a bed of steamed rice, or as a flavorful sandwich filling.

For a spicier kick, add more chili flakes. Serve in lettuce cups, over rice, or as a sandwich filling. Try grilling the chicken for added smoky flavor. Always use fresh lime juice for the best zest.
