Ingredients
- 2.25 cup All-purpose flour
- 2 tsp Baking powder
- 0.5 tsp Salt
- 0.5 cup Unsalted butter softened
- 1.5 cup Granulated sugar
- 2 large Large eggs
- 1 tsp Vanilla extract
- 1 tbsp Ube extract or flavoring
- 1 cup Powdered sugar for rolling
Instructions
- In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
- In a large bowl, cream together softened butter and granulated sugar until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla extract and ube extract until well combined and the dough is uniformly purple.
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
- Cover the dough bowl with plastic wrap and chill for at least 1-2 hours, or until firm enough to handle.
