Ingredients
- 3 cup cooked jasmine rice day-old and cold
- 2 tbsp vegetable oil divided
- 2 large eggs lightly beaten
- 1/2 cup diced carrots
- 1/2 cup frozen peas thawed
- 1/2 cup diced yellow onion
- 2 clove garlic minced
- 1 tbsp fresh ginger grated (optional)
- 3 tbsp soy sauce low-sodium
- 1 tsp sesame oil
- 1/4 tsp white pepper
- 2 stalk green onions chopped for garnish
Instructions
- Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add the lightly beaten eggs and scramble until just set. Remove the cooked eggs from the wok and set aside.
- Add the remaining 1 tablespoon of vegetable oil to the wok. Add the diced carrots, yellow onion, and thawed frozen peas. Stir-fry for 2-3 minutes until the vegetables begin to soften.
- Add the minced garlic and grated ginger (if using) to the wok. Stir-fry for another 30 seconds until fragrant, being careful not to burn the garlic.
- Add the cold, day-old rice to the wok, breaking up any clumps with your spatula. Stir-fry for 3-5 minutes, ensuring the rice is heated through and slightly toasted.
- Push the rice to one side of the wok to create an empty space. Pour the soy sauce, sesame oil, and white pepper into this space. Bring the sauce to a quick simmer, then mix it thoroughly into the rice.
- Return the scrambled eggs to the wok. Toss all the ingredients together until well combined and heated through. Taste and adjust seasoning as needed.
- Garnish with freshly chopped green onions and serve hot as a main course or a delicious side dish.
