Ingredients
- 2 tbsp olive oil
- 1 tbsp apple cider vinegar
- 1 tsp Dijon mustard
- 0.5 tsp honey or maple syrup
- pinch salt
- pinch black pepper
- 0.5 cup cooked quinoa
- 0.5 cup cherry tomatoes halved
- 0.5 cup cucumber diced
- 0.5 cup bell pepper diced (various colors)
- 0.25 cup shredded carrots
- 0.5 cup canned chickpeas rinsed and drained
- 2 cup mixed greens
Instructions
- 1. In the bottom of a 1-quart wide-mouth jar, whisk together olive oil, apple cider vinegar, Dijon mustard, honey or maple syrup, salt, and pepper.
- 2. Layer the cooked quinoa over the dressing.
- 3. Add the cherry tomatoes, cucumber, and bell peppers in separate layers, creating a vibrant rainbow effect.
- 4. Next, add the shredded carrots and rinsed chickpeas.
- 5. Finish by topping the jar with mixed greens, gently packing them in.
- 6. Seal the jar tightly and refrigerate for up to 4 days. When ready to eat, shake the jar vigorously to distribute the dressing, or pour the contents into a bowl and mix.
