Ingredients
  

  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • 0.5 tsp honey or maple syrup
  • pinch salt
  • pinch black pepper
  • 0.5 cup cooked quinoa
  • 0.5 cup cherry tomatoes halved
  • 0.5 cup cucumber diced
  • 0.5 cup bell pepper diced (various colors)
  • 0.25 cup shredded carrots
  • 0.5 cup canned chickpeas rinsed and drained
  • 2 cup mixed greens

Instructions
 

  • 1. In the bottom of a 1-quart wide-mouth jar, whisk together olive oil, apple cider vinegar, Dijon mustard, honey or maple syrup, salt, and pepper.
  • 2. Layer the cooked quinoa over the dressing.
  • 3. Add the cherry tomatoes, cucumber, and bell peppers in separate layers, creating a vibrant rainbow effect.
  • 4. Next, add the shredded carrots and rinsed chickpeas.
  • 5. Finish by topping the jar with mixed greens, gently packing them in.
  • 6. Seal the jar tightly and refrigerate for up to 4 days. When ready to eat, shake the jar vigorously to distribute the dressing, or pour the contents into a bowl and mix.
