- 6 large eggs
- 1/2 cup cottage cheese full-fat or low-fat
- 1/4 cup shredded cheese cheddar or mozzarella
- 2 tablespoons milk any kind
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1 tablespoon chives fresh
- 1/4 cup spinach finely chopped (optional)
Instructions
- Preheat your oven to 350°F (175°C). Lightly grease a 12-cup muffin tin or use silicone muffin liners.
- In a medium bowl, whisk the eggs until well beaten.
- Add the cottage cheese, shredded cheese, milk, salt, and pepper to the egg mixture. Mix well to combine.
- If using, stir in the chopped chives and spinach.
- Pour the mixture evenly into the prepared muffin cups, filling each about two-thirds full.
- Bake for 18-22 minutes, or until the egg bites are set and lightly golden on top.
- Let cool slightly before removing from the muffin tin. Serve warm or store for later.
