Ingredients
- 1 lb boneless skinless chicken breast
- 1 tbsp soy sauce
- 1 tsp cornstarch
- 2 tbsp vegetable oil divided
- 1 cup broccoli florets
- 1 cup sliced carrots
- 1/2 cup sliced bell peppers any color
- 1/4 cup sliced onion
- 2 cloves garlic minced
- 1 tsp fresh ginger grated
- 2 tbsp soy sauce
- 1 tbsp hoisin sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1/2 tsp sugar
- 1/4 cup chicken broth
Instructions
- In a medium bowl, combine chicken pieces with 1 tbsp soy sauce and 1 tsp cornstarch. Toss to coat and set aside for 10 minutes.
- In a small bowl, whisk together all sauce ingredients (2 tbsp soy sauce, hoisin, rice vinegar, sesame oil, sugar, chicken broth). Set aside.
- Heat 1 tbsp vegetable oil in a large skillet or wok over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- Add remaining 1 tbsp vegetable oil to the skillet. Add broccoli, carrots, bell peppers, and onion. Stir-fry for 3-5 minutes until vegetables are crisp-tender.
- Add minced garlic and grated ginger to the vegetables and stir-fry for 1 minute until fragrant.
- Return cooked chicken to the skillet. Pour the prepared sauce over the chicken and vegetables. Stir constantly until the sauce thickens and coats everything, about 1-2 minutes.
- Serve hot immediately with steamed rice or noodles, if desired.
