A vibrant and flavorful Turkish breakfast dish featuring scrambled eggs cooked with fresh tomatoes, green peppers, and aromatic spices in olive oil.
Ingredients
- 2 tablespoons olive oil
- 1 medium onion finely chopped (optional)
- 2 medium green bell peppers diced
- 2 medium tomatoes grated or finely chopped
- 0.5 teaspoon red pepper flakes (pul biber) or to taste
- 0.5 teaspoon dried mint (optional)
- salt to taste
- black pepper to taste
- 4 large eggs
- fresh parsley chopped for garnish (optional)
Instructions
- Heat olive oil in a non-stick pan over medium heat. Add chopped onion (if using) and sauté until softened, about 3-5 minutes.
- Add diced green bell peppers and cook until tender, about 5-7 minutes.
- Stir in the grated or finely chopped tomatoes, red pepper flakes, dried mint (if using), salt, and black pepper. Bring to a simmer and cook for 8-10 minutes, stirring occasionally, until the sauce thickens and the liquid reduces.
- Create four small wells in the tomato mixture. Crack an egg into each well.
- Cover the pan and cook for 5-7 minutes, or until the egg whites are set and the yolks are cooked to your desired consistency (runny or firm).
- Garnish with fresh chopped parsley, if desired, and serve immediately with warm crusty bread.
Notes
Serve hot with plenty of crusty bread for dipping. For a spicier kick, add extra red pepper flakes. A sprinkle of crumbled feta cheese just before serving is also a popular addition.
