Menemen: Easy Turkish Eggs

Ingredients
  

  • 2 tablespoons olive oil
  • 1 medium onion finely chopped (optional)
  • 2 medium green bell peppers diced
  • 2 medium tomatoes grated or finely chopped
  • 0.5 teaspoon red pepper flakes (pul biber) or to taste
  • 0.5 teaspoon dried mint (optional)
  • salt to taste
  • black pepper to taste
  • 4 large eggs
  • fresh parsley chopped for garnish (optional)

Instructions
 

  • Heat olive oil in a non-stick pan over medium heat. Add chopped onion (if using) and sauté until softened, about 3-5 minutes.
  • Add diced green bell peppers and cook until tender, about 5-7 minutes.
  • Stir in the grated or finely chopped tomatoes, red pepper flakes, dried mint (if using), salt, and black pepper. Bring to a simmer and cook for 8-10 minutes, stirring occasionally, until the sauce thickens and the liquid reduces.
  • Create four small wells in the tomato mixture. Crack an egg into each well.
  • Cover the pan and cook for 5-7 minutes, or until the egg whites are set and the yolks are cooked to your desired consistency (runny or firm).
  • Garnish with fresh chopped parsley, if desired, and serve immediately with warm crusty bread.

Notes

Serve hot with plenty of crusty bread for dipping. For a spicier kick, add extra red pepper flakes. A sprinkle of crumbled feta cheese just before serving is also a popular addition.
