Ingredients
  

  • 1 cup quinoa cooked according to package directions
  • 2 cups mixed greens such as spinach or kale
  • 1/2 cup roasted sweet potato cubed
  • 1/2 cup roasted broccoli florets
  • 1/4 cup black beans rinsed and drained
  • 2 tbsp salsa for serving
  • 1 avocado sliced
  • 1 tbsp pumpkin seeds for garnish
  • 2 tbsp lemon-tahini dressing optional

Instructions
 

  • Prepare quinoa according to package directions. While quinoa cooks, roast sweet potatoes and broccoli until tender and slightly caramelized. Assemble the bowl: start with a base of mixed greens, then add cooked quinoa. Arrange roasted sweet potato, roasted broccoli, black beans, and sliced avocado on top. Finish with a dollop of salsa and a sprinkle of pumpkin seeds. Drizzle with lemon-tahini dressing if desired. Serve warm or at room temperature.

Notes

Feel free to swap grains like quinoa for brown rice, or add a protein like grilled chicken, tofu, or chickpeas. A drizzle of tahini sauce or a squeeze of lime can elevate flavors. Customize with your favorite roasted vegetables.
