Ingredients
- 1 tbsp sesame oil
- 1 cup broccoli florets
- 1 cup sliced bell peppers (any color)
- 0.5 cup sliced carrots
- 0.5 cup snow peas
- 0.5 cup mushrooms sliced
- 2 cloves garlic minced
- 1 inch ginger grated
- 0.25 cup vegetable broth
- 2 tbsp black bean sauce
- 1 tbsp soy sauce
- 1 tsp cornstarch
- 1 tbsp water (for cornstarch slurry)
- 0.5 tsp sugar optional
- 2 tbsp scallions chopped
Instructions
- Heat sesame oil in a large skillet or wok over medium-high heat.
- Add broccoli, bell peppers, and carrots, stir-fry for 3-4 minutes until slightly tender-crisp.
- Add snow peas and mushrooms, stir-fry for another 2 minutes.
- Add minced garlic and grated ginger, stir-fry for 30 seconds until fragrant.
- In a small bowl, whisk together vegetable broth, black bean sauce, soy sauce, and sugar (if using).
- Pour the sauce mixture over the vegetables in the skillet.
- In a separate tiny bowl, mix cornstarch with 1 tablespoon of water to create a slurry.
- Stir the cornstarch slurry into the simmering sauce in the skillet.
- Cook for 1-2 minutes, stirring constantly, until the sauce thickens.
- Remove from heat.
- Garnish with chopped scallions and serve immediately with your favorite rice or noodles.
Notes
