Ingredients
- 2 slices halloumi cheese 1 inch thick
- 1 medium red bell pepper chopped
- 1 medium zucchini chopped
- 1 medium yellow squash chopped
- 1/2 medium red onion sliced into wedges
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper freshly ground
Instructions
- Prepare the vegetables: In a large bowl, combine the chopped red bell pepper, zucchini, yellow squash, and red onion wedges.
- Season the vegetables: Drizzle the vegetables with olive oil, sprinkle with salt and black pepper, and toss to coat evenly.
- Preheat grill: Preheat your grill or grill pan to medium-high heat.
- Grill vegetables: Place the seasoned vegetables on the hot grill. Cook for 7-10 minutes, turning occasionally, until tender-crisp and lightly charred. Remove from grill and set aside.
- Grill halloumi: While vegetables are grilling or immediately after, place the halloumi slices on the hot grill. Cook for 2-3 minutes per side, until golden brown and softened.
- Serve: Arrange the grilled halloumi and vegetables on a serving platter. Serve immediately.
