Ingredients
  

  • 2 slices halloumi cheese 1 inch thick
  • 1 medium red bell pepper chopped
  • 1 medium zucchini chopped
  • 1 medium yellow squash chopped
  • 1/2 medium red onion sliced into wedges
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper freshly ground

Instructions
 

  • Prepare the vegetables: In a large bowl, combine the chopped red bell pepper, zucchini, yellow squash, and red onion wedges.
  • Season the vegetables: Drizzle the vegetables with olive oil, sprinkle with salt and black pepper, and toss to coat evenly.
  • Preheat grill: Preheat your grill or grill pan to medium-high heat.
  • Grill vegetables: Place the seasoned vegetables on the hot grill. Cook for 7-10 minutes, turning occasionally, until tender-crisp and lightly charred. Remove from grill and set aside.
  • Grill halloumi: While vegetables are grilling or immediately after, place the halloumi slices on the hot grill. Cook for 2-3 minutes per side, until golden brown and softened.
  • Serve: Arrange the grilled halloumi and vegetables on a serving platter. Serve immediately.

Notes

For extra flavor, marinate the vegetables in olive oil and a dash of dried herbs (like oregano or thyme) for 15-30 minutes before grilling. Serve with a squeeze of fresh lemon juice or a sprinkle of chopped fresh mint for a burst of freshness. This dish is excellent on its own, or alongside couscous, quinoa, or a fresh green salad.
