Ingredients
  

  • 1.5 lb boneless skinless chicken thighs or breasts
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup Greek yogurt plain
  • 1/2 cup cucumber grated and squeezed dry
  • 2 tbsp fresh dill finely chopped
  • 1 clove garlic minced
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 8 small wooden skewers soaked in water

Instructions
 

  • In a medium bowl, combine the olive oil, 2 tablespoons lemon juice, 2 minced garlic cloves, oregano, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Add the cubed chicken and toss to coat evenly. Cover and refrigerate for at least 20 minutes, or up to 4 hours.
  • While the chicken marinates, prepare the tzatziki. In a separate bowl, combine the Greek yogurt, grated and squeezed cucumber, fresh dill, 1 minced garlic clove, 1 tablespoon lemon juice, 1 tablespoon olive oil, and salt and pepper to taste. Stir well and refrigerate until ready to serve.
  • Preheat your grill to medium-high heat. Thread the marinated chicken onto the soaked wooden skewers, ensuring not to overcrowd them.
  • Grill the chicken skewers for 5-7 minutes per side, or until the chicken is fully cooked through and has nice grill marks. The internal temperature of the chicken should reach 165°F (74°C).
  • Remove the skewers from the grill and let them rest for a few minutes before serving. Serve hot with the prepared homemade tzatziki sauce on the side.

Notes

For best flavor, marinate the chicken for at least 30 minutes, or up to 4 hours in the refrigerator. If using wooden skewers, remember to soak them in water for at least 30 minutes before grilling to prevent burning. Serve with warm pita bread, a Greek salad, or rice. For a variation, add bell peppers, onions, or cherry tomatoes to the skewers with the chicken.
