- 8 ounce dried noodles such as ramen
- 2 tablespoon gochujang Korean chili paste
- 2 tablespoon peanut butter creamy or crunchy
- 1 tablespoon soy sauce low sodium preferred
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil toasted
- 1 tablespoon brown sugar packed
- 2 clove garlic minced
- 1/4 cup water or reserved noodle cooking water
- 2 tablespoon green onions sliced for garnish
- 1 tablespoon sesame seeds for garnish
Instructions
- Cook noodles according to package directions until al dente. Drain well, reserving about 1/4 cup of the starchy noodle cooking water. While the noodles cook, prepare the sauce. In a large mixing bowl, whisk together the gochujang, peanut butter, soy sauce, rice vinegar, toasted sesame oil, brown sugar, and minced garlic. Add the reserved noodle cooking water (or regular water) to the sauce mixture, whisking until smooth and creamy. The consistency should be pourable but thick enough to coat the noodles. Add the drained hot noodles directly to the bowl with the sauce. Toss thoroughly until all the noodles are evenly coated in the rich, vibrant sauce.
