- 200 g cooked quinoa cold
- 100 g mixed greens fresh
- 0.5 cup cucumber diced
- 0.5 cup cherry tomatoes halved
- 0.25 cup red onion thinly sliced
- 0.25 cup carrots julienned
- 0.25 cup bell pepper diced
- 2 tbsp peanut sauce for dressing
- 1 tbsp lime juice fresh
- 1 tsp sesame seeds for garnish
- 0.5 tsp red pepper flakes optional
Instructions
- 1. In a large bowl, combine cooked quinoa, mixed greens, diced cucumber, cherry tomatoes, sliced red onion, julienned carrots, and diced bell pepper.
- 2. In a small separate bowl, whisk together peanut sauce and fresh lime juice until well combined.
