Ingredients
- 1.5 lb boneless skinless chicken thighs
- 1/4 cup olive oil
- 2 cloves garlic minced
- 1 tbsp lemon juice
- 1 tsp smoked paprika
- 1/2 tsp cumin
- 1/2 tsp coriander
- 1/4 tsp cayenne pepper optional
- 1 tsp salt
- 1/2 tsp black pepper freshly ground
- 1 cup bell peppers mixed colors
- 1 cup red onion cut into 1-inch pieces
- 12 wooden or metal skewers
Instructions
- In a large bowl, combine the olive oil, minced garlic, lemon juice, smoked paprika, cumin, coriander, cayenne pepper (if using), salt, and black pepper. Mix well.
- Add the cut chicken pieces to the marinade, tossing to ensure all pieces are evenly coated. Cover the bowl and refrigerate for at least 30 minutes, or preferably 2-4 hours, or even overnight for maximum flavor.
- If using wooden skewers, soak them in water for at least 30 minutes while the chicken marinates.
- Preheat your grill to medium-high heat (about 400°F/200°C). Alternatively, you can use a grill pan or bake in the oven at 400°F (200°C) for 20-25 minutes.
- Thread the marinated chicken pieces onto the skewers, alternating with bell pepper and red onion pieces until all ingredients are used.
- Lightly oil the grill grates. Place the skewers on the hot grill. Cook for 3-4 minutes per side, turning occasionally, until the chicken is cooked through and has nice char marks (internal temperature should reach 165°F/74°C).
- Remove skewers from the grill and let rest for a few minutes before serving.
Notes
