Ingredients
- 1 lb boneless skinless chicken breast
- 2 tbsp soy sauce
- 1 tbsp cornstarch
- 1 tbsp sesame oil
- 2 cloves garlic minced
- 1 inch fresh ginger grated
- 1 medium bell pepper sliced (any color)
- 1 cup broccoli florets
- 1/4 cup chicken broth
- 2 tbsp soy sauce
- 1 tbsp honey or brown sugar
- 1 tsp rice vinegar
- 1 tsp cornstarch
- cooked rice for serving optional
Instructions
- In a bowl, combine chicken pieces with 2 tbsp soy sauce and 1 tbsp cornstarch. Toss to coat and marinate for at least 10 minutes.
- In a small bowl, whisk together chicken broth, 2 tbsp soy sauce, honey (or brown sugar), rice vinegar, and 1 tsp cornstarch until smooth. Set aside.
- Heat sesame oil in a large skillet or wok over medium-high heat. Add marinated chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- Add minced garlic and grated ginger to the skillet, stirring for 30 seconds until fragrant.
- Add bell pepper and broccoli florets to the skillet. Stir-fry for 3-5 minutes until vegetables are tender-crisp.
- Return cooked chicken to the skillet. Give the prepared sauce a quick whisk and pour it over the chicken and vegetables.
- Cook, stirring constantly, until the sauce thickens and coats everything, about 1-2 minutes.
- Serve hot immediately, optionally over cooked rice.
