Ingredients
  

  • 1 lb boneless skinless chicken breast
  • 2 tbsp soy sauce
  • 1 tbsp cornstarch
  • 1 tbsp sesame oil
  • 2 cloves garlic minced
  • 1 inch fresh ginger grated
  • 1 medium bell pepper sliced (any color)
  • 1 cup broccoli florets
  • 1/4 cup chicken broth
  • 2 tbsp soy sauce
  • 1 tbsp honey or brown sugar
  • 1 tsp rice vinegar
  • 1 tsp cornstarch
  • cooked rice for serving optional

Instructions
 

  • In a bowl, combine chicken pieces with 2 tbsp soy sauce and 1 tbsp cornstarch. Toss to coat and marinate for at least 10 minutes.
  • In a small bowl, whisk together chicken broth, 2 tbsp soy sauce, honey (or brown sugar), rice vinegar, and 1 tsp cornstarch until smooth. Set aside.
  • Heat sesame oil in a large skillet or wok over medium-high heat. Add marinated chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  • Add minced garlic and grated ginger to the skillet, stirring for 30 seconds until fragrant.
  • Add bell pepper and broccoli florets to the skillet. Stir-fry for 3-5 minutes until vegetables are tender-crisp.
  • Return cooked chicken to the skillet. Give the prepared sauce a quick whisk and pour it over the chicken and vegetables.
  • Cook, stirring constantly, until the sauce thickens and coats everything, about 1-2 minutes.
  • Serve hot immediately, optionally over cooked rice.

Notes

Serve with steamed rice or noodles. Add your favorite vegetables like snap peas, carrots, or mushrooms. For extra heat, add a pinch of red pepper flakes. For a thicker sauce, add an extra teaspoon of cornstarch to the sauce mixture.
