Ingredients
  

  • 1 cup fresh parsley finely chopped
  • 1/4 cup fresh oregano leaves finely chopped (or 1 tsp dried)
  • 4 cloves garlic minced
  • 1/2 cup extra virgin olive oil
  • 3 Tbsp red wine vinegar
  • 1/2 tsp red pepper flakes optional
  • 1/2 tsp salt
  • 1/4 tsp black pepper freshly ground

Instructions
 

  • Finely chop the fresh parsley and oregano leaves. Mince the garlic cloves. You can do this by hand or pulse briefly in a food processor (be careful not to over-process into a paste).
  • In a medium bowl, combine the chopped parsley, oregano, and minced garlic.
  • Add the extra virgin olive oil, red wine vinegar, red pepper flakes (if using), salt, and black pepper to the bowl.
  • Stir well to combine all the ingredients. Let the chimichurri sit for at least 10-15 minutes before serving to allow the flavors to meld. For best results, chill for 30 minutes or longer.

Notes

For a spicier kick, increase the red pepper flakes. You can also add a pinch of dried oregano if fresh is unavailable. Store leftover chimichurri in an airtight container in the refrigerator for up to 5-7 days. It's excellent on eggs, as a sandwich spread, or mixed into rice.
