Ingredients
  

  • 1.5 cup all-purpose flour
  • 2 tbsp granulated sugar
  • 2 tsp baking powder
  • 0.5 tsp salt
  • 1 cup milk
  • 2 tbsp unsalted butter melted
  • 1 large egg

Instructions
 

  • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  • In a separate medium bowl, whisk together the milk, melted butter, and egg.
  • Pour the wet ingredients into the dry ingredients and mix with a spoon or whisk until just combined. Do not overmix; a few lumps are fine.
  • Heat a lightly oiled griddle or non-stick pan over medium heat.
  • Pour about 1/4 cup of batter for each pancake onto the griddle.
  • Cook for 2-3 minutes per side, or until golden brown and bubbles appear on the surface.
  • Flip and cook for another 1-2 minutes until cooked through.
  • Serve immediately with your favorite toppings.

Notes

For extra flavor, add a teaspoon of vanilla extract to the batter. Serve with fresh berries, maple syrup, or whipped cream. Do not overmix the batter; lumps are fine! Keep cooked pancakes warm in a low oven while you finish the batch.
