Ingredients
- 1.5 lb boneless skinless chicken breasts
- 2 bell peppers any color sliced
- 1 onion large sliced
- 2 tbsp olive oil
- 1 tbsp chili powder
- 1 tsp cumin
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/4 tsp onion powder
- 8 small flour tortillas for serving
- Fresh cilantro for garnish chopped
Instructions
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
- In a large bowl, combine sliced chicken, bell peppers, and onion. Drizzle with olive oil and toss to coat.
- In a small bowl, mix together chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper.
- Sprinkle the seasoning mixture over the chicken and vegetables, tossing until everything is evenly coated.
- Spread the chicken and vegetables in a single layer on the prepared baking sheet.
- Bake for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender-crisp. You can stir halfway through cooking if desired.
- Remove from oven and serve immediately with warm tortillas, salsa, guacamole, and sour cream. Garnish with fresh cilantro.
