Ingredients
  

  • 1.5 lb boneless skinless chicken breasts
  • 2 bell peppers any color sliced
  • 1 onion large sliced
  • 2 tbsp olive oil
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 8 small flour tortillas for serving
  • Fresh cilantro for garnish chopped

Instructions
 

  • Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
  • In a large bowl, combine sliced chicken, bell peppers, and onion. Drizzle with olive oil and toss to coat.
  • In a small bowl, mix together chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper.
  • Sprinkle the seasoning mixture over the chicken and vegetables, tossing until everything is evenly coated.
  • Spread the chicken and vegetables in a single layer on the prepared baking sheet.
  • Bake for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender-crisp. You can stir halfway through cooking if desired.
  • Remove from oven and serve immediately with warm tortillas, salsa, guacamole, and sour cream. Garnish with fresh cilantro.

Notes

Serve with warm tortillas, salsa, guacamole, and sour cream. For a spicier kick, add a pinch of cayenne pepper to the seasoning. Leftovers are great in salads or wraps. Adjust cooking time for thicker chicken pieces.
