Ingredients
  

  • 2 pieces boneless skinless chicken breasts
  • 1 tbsp olive oil
  • 0.5 tsp dried oregano
  • 0.5 tsp dried thyme
  • 0.25 tsp garlic powder
  • 0.25 tsp salt
  • 0.125 tsp black pepper
  • 1 tbsp lemon juice freshly squeezed
  • 2 tbsp fresh parsley chopped for garnish (optional)

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Pat chicken breasts dry with paper towels. In a small bowl, mix olive oil, oregano, thyme, garlic powder, salt, and pepper.
  • Rub the spice mixture all over the chicken breasts. Place them on a baking sheet.
  • Roast for 18-22 minutes, or until chicken reaches an internal temperature of 165°F (74°C).
  • Remove from oven, drizzle with lemon juice, and let rest for 5 minutes before slicing and serving. Garnish with fresh parsley if desired.

Notes

For extra flavor, marinate chicken for at least 30 minutes. Serve with a simple salad or roasted vegetables. Leftovers are great for sandwiches or wraps. Adjust spices to your preference for a bolder flavor.
