- 1/4 tsp salt
- 1/8 tsp black pepper
- 1 lemon zested and juiced
- 1 head broccoli cut into florets
- 1 medium red bell pepper seeded and chopped
- 2 medium potatoes diced (e.g.
- 2 tbsp fresh parsley chopped
Instructions
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
- In a large bowl, combine chicken pieces, olive oil, minced garlic, oregano, paprika, salt, pepper, and lemon zest. Toss to coat evenly.
