Ingredients
  

  • 1.5 lb boneless skinless chicken breasts or thighs
  • 2 tbsp olive oil
  • 4 cloves garlic minced
  • 1 tsp dried oregano
  • 1/2 tsp paprika
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1 lemon zested and juiced
  • 1 head broccoli cut into florets
  • 1 medium red bell pepper seeded and chopped
  • 2 medium potatoes diced (e.g.
  • 2 tbsp fresh parsley chopped

Instructions
 

  • Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
  • In a large bowl, combine chicken pieces, olive oil, minced garlic, oregano, paprika, salt, pepper, and lemon zest. Toss to coat evenly.
  • Add broccoli florets, red bell pepper, and diced potatoes to the bowl with the chicken. Squeeze in lemon juice and toss everything together until well combined.
  • Spread the chicken and vegetables in a single layer on the prepared baking sheet.
  • Bake for 20-25 minutes, or until chicken is cooked through and vegetables are tender-crisp. Flip ingredients halfway through cooking for even browning.
  • Garnish with fresh chopped parsley, if using, and serve immediately.

Notes

Use any sturdy vegetables like carrots, zucchini, or sweet potatoes. For extra flavor, marinate the chicken for 15-30 minutes beforehand. Serve with quinoa or rice if desired.
