- 1 tbsp ginger grated
- 2 cloves garlic minced
- 1 cup broccoli florets
- 1 cup carrots julienned
- 1 cup bell peppers sliced (any color)
- 1/2 cup snow peas
- 1/4 cup soy sauce low sodium
- 1 tbsp hoisin sauce
- 1 tsp sugar
- 1/4 cup vegetable broth
Instructions
- Prepare noodles according to package instructions, drain, and set aside.
- In a small bowl, whisk together soy sauce, hoisin sauce, sugar, and vegetable broth. Set aside.
- Heat 1 tbsp sesame oil in a large skillet or wok over medium-high heat.
- Add grated ginger and minced garlic, stir-fry for 30 seconds until fragrant.
- Add broccoli, carrots, and bell peppers. Stir-fry for 3-4 minutes until vegetables are crisp-tender.
- Add snow peas and stir-fry for 1 minute.
- Add the cooked noodles and the prepared sauce to the skillet. Toss everything together until the noodles are well coated and heated through.
- Drizzle with the remaining 1 tbsp sesame oil before serving. Serve immediately.
