Ingredients
  

  • 8 oz Lo Mein noodles cooked according to package directions
  • 2 tbsp sesame oil divided
  • 1 tbsp ginger grated
  • 2 cloves garlic minced
  • 1 cup broccoli florets
  • 1 cup carrots julienned
  • 1 cup bell peppers sliced (any color)
  • 1/2 cup snow peas
  • 1/4 cup soy sauce low sodium
  • 1 tbsp hoisin sauce
  • 1 tsp sugar
  • 1/4 cup vegetable broth

Instructions
 

  • Prepare noodles according to package instructions, drain, and set aside.
  • In a small bowl, whisk together soy sauce, hoisin sauce, sugar, and vegetable broth. Set aside.
  • Heat 1 tbsp sesame oil in a large skillet or wok over medium-high heat.
  • Add grated ginger and minced garlic, stir-fry for 30 seconds until fragrant.
  • Add broccoli, carrots, and bell peppers. Stir-fry for 3-4 minutes until vegetables are crisp-tender.
  • Add snow peas and stir-fry for 1 minute.
  • Add the cooked noodles and the prepared sauce to the skillet. Toss everything together until the noodles are well coated and heated through.
  • Drizzle with the remaining 1 tbsp sesame oil before serving. Serve immediately.

Notes

Feel free to add your favorite protein like chicken, shrimp, or tofu. Ensure vegetables are cut uniformly for even cooking. For extra flavor, use homemade broth. Adjust soy sauce and sesame oil to taste.
