A popular and delicious Korean savory pancake, Kimchi Jeon is made with fermented kimchi, flour, and sometimes vegetables, pan-fried to a perfect crisp. It's known for its tangy, spicy, and savory flavor.
Ingredients
- 1 cup all-purpose flour
- 0.5 cup water
- 0.25 cup kimchi juice
- 1 cup chopped kimchi drained
- 0.5 small onion sliced thinly
- 2 tablespoon green onion chopped
- 0.5 teaspoon sugar
- 3 tablespoon vegetable oil for frying
Instructions
- In a large bowl, whisk together flour, water, and kimchi juice until smooth.
- Add chopped kimchi, sliced onion, green onion, sugar, salt, and black pepper to the batter. Mix until well combined.
- Heat 1-2 tablespoons of vegetable oil in a non-stick pan over medium heat.
- Pour about 1/2 cup of batter into the pan and spread it thinly to form a round pancake.
- Cook for 3-5 minutes per side, until golden brown and crispy. Add more oil if needed.
- Repeat with the remaining batter.
- Serve hot, optionally with a dipping sauce.
Notes
For extra flavor, you can add a tablespoon of minced pork or shrimp. Adjust the amount of kimchi juice for desired tanginess. Serve with a simple dipping sauce of soy sauce, vinegar, and a pinch of sesame seeds.
