Ingredients
  

  • 1 cup all-purpose flour
  • 0.5 cup water
  • 0.25 cup kimchi juice
  • 1 cup chopped kimchi drained
  • 0.5 small onion sliced thinly
  • 2 tablespoon green onion chopped
  • 0.5 teaspoon sugar
  • 3 tablespoon vegetable oil for frying

Instructions
 

  • In a large bowl, whisk together flour, water, and kimchi juice until smooth.
  • Add chopped kimchi, sliced onion, green onion, sugar, salt, and black pepper to the batter. Mix until well combined.
  • Heat 1-2 tablespoons of vegetable oil in a non-stick pan over medium heat.
  • Pour about 1/2 cup of batter into the pan and spread it thinly to form a round pancake.
  • Cook for 3-5 minutes per side, until golden brown and crispy. Add more oil if needed.
  • Repeat with the remaining batter.
  • Serve hot, optionally with a dipping sauce.

Notes

For extra flavor, you can add a tablespoon of minced pork or shrimp. Adjust the amount of kimchi juice for desired tanginess. Serve with a simple dipping sauce of soy sauce, vinegar, and a pinch of sesame seeds.
