Ingredients
  

  • 2 null salmon fillets (6 oz each) skin on or off
  • 2 null sheets parchment paper (12x16 inches)
  • 1 null lemon thinly sliced
  • 2 tbsp fresh dill chopped
  • 2 tbsp fresh parsley chopped
  • 1 tbsp capers drained
  • 1 tbsp olive oil extra virgin
  • 0.5 tsp salt to taste
  • 0.25 tsp black pepper freshly ground

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Lay each salmon fillet in the center of a sheet of parchment paper. Season both sides of the salmon with salt and pepper.
  • Top each fillet with half of the lemon slices, chopped dill, chopped parsley, and drained capers. Drizzle each with half of the olive oil.
  • Bring the two longer sides of the parchment paper together over the salmon and fold them down twice to create a tight seal. Then, fold and crimp the shorter ends inwards to create a completely sealed packet.
  • Place the sealed parchment packets on a baking sheet. Bake for 12-15 minutes, or until the salmon is cooked through and flaky. The cooking time may vary depending on the thickness of your salmon.
  • Carefully open the parchment packets (watch out for steam!) and serve the salmon directly from the paper or transfer to plates. Garnish with extra fresh herbs if desired.

Notes

Feel free to add thin-sliced vegetables like asparagus, cherry tomatoes, or zucchini to the parchment packet along with the salmon. Ensure the parchment paper is sealed tightly to lock in all the moisture and flavor. Serve immediately with a side of quinoa or a light salad.
