Ingredients
- 1 lb boneless skinless chicken thighs cut into 1-inch pieces
- 0.25 cup cornstarch
- 0.5 tsp salt
- 0.25 tsp black pepper
- 2 tbsp vegetable oil for frying
- 0.25 cup soy sauce
- 2 tbsp honey or maple syrup
- 1 tbsp rice vinegar
- 1 tsp grated fresh ginger
- 2 cloves garlic minced
- 0.5 tsp sesame oil
- 0.25 cup water or chicken broth
- 1 tbsp sesame seeds for garnish
- 2 tbsp green onions sliced
Instructions
- In a bowl, toss the chicken pieces with cornstarch, salt, and pepper until evenly coated.
- Heat vegetable oil in a large skillet or wok over medium-high heat. Add chicken in a single layer, making sure not to overcrowd the pan. You may need to cook in batches.
- Pan-fry chicken for 4-6 minutes per side, or until golden brown and cooked through. Remove chicken from the skillet and set aside.
- In a small bowl, whisk together soy sauce, honey, rice vinegar, ginger, minced garlic, sesame oil, and water or chicken broth.
- Pour the sauce into the same skillet and bring to a simmer, stirring constantly, until it thickens slightly, about 2-3 minutes.
- Return the cooked chicken to the skillet, tossing gently to coat all the pieces evenly with the glossy sauce.
- Garnish with sesame seeds and sliced green onions before serving immediately.
