Ingredients
- 4 cup water
- 0.5 cup apple cider vinegar
- 0.25 cup maple syrup or molasses to taste
- 2 inch fresh ginger peeled and thinly sliced
- a pinch of salt optional
Instructions
- Combine water, apple cider vinegar, maple syrup (or molasses), sliced ginger, and salt (if using) in a large pitcher.
- Stir vigorously until the sweetener is fully dissolved.
- Cover the pitcher and place it in the refrigerator to chill for at least 2 hours, or preferably overnight, to allow the flavors to deepen.
- Before serving, use a fine-mesh strainer to remove the ginger slices from the switchel.
- Pour over ice and garnish with a lemon wheel or a fresh mint sprig, if desired. Serve immediately and enjoy this revitalizing historical drink.
Notes
