A tangy and invigorating beverage, Switchel is a historical thirst-quencher, traditionally enjoyed by farmers during arduous hay harvests. Its unique blend of apple cider vinegar, ginger, and natural sweetener provides a refreshing kick.

Ingredients
  

  • 4 cup water
  • 0.5 cup apple cider vinegar
  • 0.25 cup maple syrup or molasses to taste
  • 2 inch fresh ginger peeled and thinly sliced
  • a pinch of salt optional

Instructions
 

  • Combine water, apple cider vinegar, maple syrup (or molasses), sliced ginger, and salt (if using) in a large pitcher.
  • Stir vigorously until the sweetener is fully dissolved.
  • Cover the pitcher and place it in the refrigerator to chill for at least 2 hours, or preferably overnight, to allow the flavors to deepen.
  • Before serving, use a fine-mesh strainer to remove the ginger slices from the switchel.
  • Pour over ice and garnish with a lemon wheel or a fresh mint sprig, if desired. Serve immediately and enjoy this revitalizing historical drink.

Notes

For the best flavor, use fresh ginger. Adjust the amount of sweetener to your preference. Serve well-chilled, and consider adding lemon or lime slices, or a sprig of fresh mint for extra zest. Switchel can be stored in the refrigerator for up to 3-4 days.
