  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 2 tablespoons sugar
  • 0.5 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 slice bread for toast
  • 2 large eggs for scrambling
  • 0.25 cup shredded cheese
  • 0.25 cup mixed vegetables diced
  • 1 tablespoon cooking oil

Instructions
 

  • For Pancakes: In a large bowl, whisk together flour, baking powder, sugar, and salt. In a separate bowl, whisk milk, egg, and melted butter. Pour the wet ingredients into the dry and mix until just combined. Cook on a hot griddle until bubbles form, then flip. For Scrambled Eggs: Whisk eggs with cheese and vegetables. Heat oil in a non-stick pan over medium heat. Pour in egg mixture and stir gently until cooked to your desired consistency. Serve with toast. For Brunch Bakes (general idea): Layer bread, cooked sausage or bacon, cheese, and a whisked egg mixture in a baking dish. Bake at 375°F (190°C) until set and golden brown.
