Ingredients
- 2 trout fillets about 6 oz each
- 2 cup mixed vegetables thinly sliced (e.g.
- 4 large basil leaves
- 2 tbsp fresh lemon juice
- salt to taste

- 2 sheets parchment paper
Instructions
- Preheat your oven to 400°F (200°C).
- Lay out two large sheets of parchment paper on a baking tray.
- Divide the sliced mixed vegetables evenly between the two sheets of parchment paper.
- Place one trout fillet on top of the vegetables on each sheet.
- Add 2 basil leaves to each parcel, then drizzle with 1 tablespoon of fresh lemon juice over each fillet.
- Season both fillets lightly with salt and pepper to taste.
- Carefully fold the parchment paper over the fish and vegetables. Crimp the edges tightly together to form a sealed parcel, ensuring no steam can escape.
