This healthy and simple recipe features tender trout and vibrant vegetables steamed in parchment paper, creating a flavorful and mess-free dinner.

Ingredients
  

  • 2 trout fillets about 6 oz each
  • 2 cup mixed vegetables thinly sliced (e.g.
  • 4 large basil leaves
  • 2 tbsp fresh lemon juice
  • salt to taste
  • pepper to taste
  • 2 sheets parchment paper

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Lay out two large sheets of parchment paper on a baking tray.
  • Divide the sliced mixed vegetables evenly between the two sheets of parchment paper.
  • Place one trout fillet on top of the vegetables on each sheet.
  • Add 2 basil leaves to each parcel, then drizzle with 1 tablespoon of fresh lemon juice over each fillet.
  • Season both fillets lightly with salt and pepper to taste.
  • Carefully fold the parchment paper over the fish and vegetables. Crimp the edges tightly together to form a sealed parcel, ensuring no steam can escape.
  • Arrange the sealed parcels on a baking tray.
  • Bake for 15-20 minutes, or until the fish is cooked through and flaky. The cooking time may vary slightly depending on the thickness of your trout fillets.
  • Carefully open the parcels (watch out for steam!) and serve immediately.

Notes

Feel free to experiment with different vegetables like asparagus, cherry tomatoes, or sliced bell peppers. A splash of white wine or a few slices of lemon can also be added for extra flavor. Serve immediately.
