Ingredients
  

  • 6 cups mixed greens such as spinach and arugula
  • 2 medium apples cored and thinly sliced (e.g.
  • 0.5 cup walnuts chopped
  • 0.25 cup red onion thinly sliced
  • 0.5 cup cucumber diced
  • 0.25 cup crumbled goat cheese optional
  • 3 tablespoons olive oil for dressing
  • 1 tablespoon apple cider vinegar for dressing
  • 1 teaspoon Dijon mustard for dressing
  • 1 teaspoon maple syrup optional
  • 0.25 teaspoon salt for dressing
  • 0.125 teaspoon black pepper for dressing

Instructions
 

  • In a small bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, maple syrup (if using), salt, and pepper to create the dressing.
  • In a large salad bowl, combine the mixed greens, sliced apples, chopped walnuts, thinly sliced red onion, and diced cucumber.
  • Drizzle the prepared dressing over the salad ingredients.
  • Toss gently to ensure all ingredients are well coated.
  • If desired, sprinkle with crumbled goat cheese before serving. Serve immediately and enjoy your fresh, no-cook fall dinner!

Notes

For extra protein, add grilled chicken (pre-cooked) or crumbled feta cheese. A sprinkle of dried cranberries or pomegranate seeds also makes a great addition. You can prepare the dressing ahead of time.
