Ingredients
  

  • 2 medium persimmons sliced
  • 0.5 cup walnuts chopped
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 0.5 tsp honey
  • pinch of salt
  • pinch of black pepper

Instructions
 

  • Wash and carefully slice the persimmons. If using Hachiya persimmons, ensure they are very soft before slicing. In a small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and black pepper to create the vinaigrette. Arrange the persimmon slices and chopped walnuts on a serving plate. Drizzle the prepared vinaigrette evenly over the salad. Serve immediately and enjoy this fresh, flavorful dish.

Notes

Try adding goat cheese, a handful of arugula, or a drizzle of balsamic glaze for extra flavor. For Fuyu persimmons, you can enjoy them firm and crisp; for Hachiya, ensure they are very soft before slicing.
