Ingredients

  • 2 tbsp chia seeds
  • 1/2 cup milk (almond soy
  • 1/2 cup fresh strawberries diced
  • 1 tsp maple syrup or honey optional
  • 1/4 tsp vanilla extract optional

Instructions

  • In a jar or bowl, combine chia seeds, milk, optional sweetener, and vanilla extract.
  • Stir vigorously for about 1 minute to prevent the chia seeds from clumping. Ensure all seeds are submerged in the liquid.
  • Gently fold in the diced fresh strawberries.
  • Cover the jar or bowl and refrigerate for at least 4 hours, or ideally overnight, until the pudding has thickened.
  • Before serving, give the pudding a good stir. Enjoy cold, optionally topped with extra fresh strawberries or other desired toppings.

Notes

For best results, allow the pudding to chill for at least 4 hours, or preferably overnight, to achieve a thick, creamy texture. Stir well before serving. You can vary the fruit with blueberries, raspberries, or mango. Top with granola, nuts, or coconut flakes for added texture.
