Ingredients
- 1 lb chicken breast cubed
- 1 tbsp olive oil
- 1 tsp paprika
- 0.5 tsp garlic powder
- 0.5 tsp onion powder
- 0.25 tsp salt
- 0.25 tsp black pepper
- 2 cup cooked brown rice warm
- 1 cup cherry tomatoes halved
- 0.5 cup cucumber diced
- 0.25 cup red onion thinly sliced
- 0.25 cup fresh cilantro chopped
- 2 tbsp lime juice
- 1 tbsp honey
- 1 tbsp soy sauce
- 1 tsp sriracha optional
Instructions
- 1. In a bowl, toss cubed chicken with olive oil, paprika, garlic powder, onion powder, salt, and pepper.
- 2. Heat a large skillet over medium-high heat. Add chicken and cook for 5-7 minutes, or until cooked through and lightly browned.
- 3. While chicken cooks, prepare the dressing by whisking together lime juice, honey, soy sauce, and sriracha (if using) in a small bowl.
- 4. Assemble bowls by dividing warm brown rice among serving bowls. Top with cooked chicken, cherry tomatoes, cucumber, red onion, and fresh cilantro.
- 5. Drizzle generously with the prepared dressing and serve immediately.
