Instructions
1. In a bowl, toss cubed chicken with olive oil, paprika, garlic powder, onion powder, salt, and pepper.
2. Heat a large skillet over medium-high heat. Add chicken and cook for 5-7 minutes, or until cooked through and lightly browned.
3. While chicken cooks, prepare the dressing by whisking together lime juice, honey, soy sauce, and sriracha (if using) in a small bowl.
4. Assemble bowls by dividing warm brown rice among serving bowls. Top with cooked chicken, cherry tomatoes, cucumber, red onion, and fresh cilantro.
5. Drizzle generously with the prepared dressing and serve immediately.
Notes
Customize with your favorite greens, grains, or sauces. Leftovers make a great lunch! For extra crispiness, try air frying the chicken.
