Ingredients
- 2.5 cup all-purpose flour plus more for dusting
- 1 tbsp baking powder
- 0.5 tsp salt
- 0.5 cup unsalted butter cold
- 0.5 cup granulated sugar
- 1 tsp vanilla extract
- 0.75 cup heavy cream plus more for brushing
- 1 cup fresh strawberries diced
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, baking powder, salt, and granulated sugar.
- Add the cold butter cubes to the dry ingredients. Using your fingertips or a pastry blender, cut the butter into the flour until the mixture resembles coarse crumbs.
- Stir in the diced fresh strawberries.
- In a separate small bowl, whisk together heavy cream and vanilla extract. Pour the wet ingredients into the dry ingredients and mix gently with a fork until just combined. Do not overmix.
- Turn the dough out onto a lightly floured surface. Gently pat it into a round disc, about 1-inch thick. Use a 2-inch round cutter to cut out scones, re-patting scraps as needed.
