These light and fluffy scones, infused with fresh strawberries and aromatic vanilla, offer a delightful treat perfect for breakfast, brunch, or an afternoon tea.

Ingredients
  

  • 2.5 cup all-purpose flour plus more for dusting
  • 1 tbsp baking powder
  • 0.5 tsp salt
  • 0.5 cup unsalted butter cold
  • 0.5 cup granulated sugar
  • 1 tsp vanilla extract
  • 0.75 cup heavy cream plus more for brushing
  • 1 cup fresh strawberries diced

Instructions
 

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a large bowl, whisk together flour, baking powder, salt, and granulated sugar.
  • Add the cold butter cubes to the dry ingredients. Using your fingertips or a pastry blender, cut the butter into the flour until the mixture resembles coarse crumbs.
  • Stir in the diced fresh strawberries.
  • In a separate small bowl, whisk together heavy cream and vanilla extract. Pour the wet ingredients into the dry ingredients and mix gently with a fork until just combined. Do not overmix.
  • Turn the dough out onto a lightly floured surface. Gently pat it into a round disc, about 1-inch thick. Use a 2-inch round cutter to cut out scones, re-patting scraps as needed.
  • Place scones on the prepared baking sheet. Brush the tops with a little extra heavy cream.
  • Bake for 15-20 minutes, or until golden brown and risen.
  • Let cool slightly on a wire rack before serving.

Notes

For best results, ensure butter is very cold. Do not overmix the dough. Serve with clotted cream and jam for a traditional experience. You can replace strawberries with other berries like blueberries or raspberries.
