Ingredients
- 1 lb boneless skinless chicken thighs or breast
- 0.5 cup teriyaki sauce store-bought or homemade
- 2 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 tsp grated fresh ginger
- 0.5 tsp garlic powder
- 12 ea small slider buns
- 2 tbsp mayonnaise
- 1 cup shredded lettuce
- 0.25 cup sliced green onions for garnish
Instructions
- In a bowl, toss diced chicken with teriyaki sauce, sesame oil, rice vinegar, ginger, and garlic powder. Marinate for at least 15 minutes.
- Heat a large skillet or non-stick pan over medium-high heat. Add the marinated chicken and cook for 8-10 minutes, stirring occasionally, until chicken is cooked through and sauce has thickened.
- While chicken cooks, slice slider buns in half. Lightly toast buns if desired.
- Spread mayonnaise on the bottom halves of the buns. Top with shredded lettuce.
- Spoon the cooked teriyaki chicken onto the lettuce. Garnish with sliced green onions.
- Place the top halves of the buns and serve immediately.
Notes
Serve on Hawaiian rolls with a slice of pineapple or a sprinkle of sesame seeds. For a spicier kick, add a dash of sriracha to the teriyaki sauce. Can be made with leftover cooked chicken for even quicker prep.
