Delicious mini chicken sliders coated in a savory-sweet teriyaki sauce, perfect for appetizers or a light meal. These sliders are inspired by Asian flavors and are quick to assemble, making them a crowd-pleaser for any occasion.

Ingredients
  

  • 1 lb boneless skinless chicken thighs or breast
  • 0.5 cup teriyaki sauce store-bought or homemade
  • 2 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tsp grated fresh ginger
  • 0.5 tsp garlic powder
  • 12 ea small slider buns
  • 2 tbsp mayonnaise
  • 1 cup shredded lettuce
  • 0.25 cup sliced green onions for garnish

Instructions
 

  • In a bowl, toss diced chicken with teriyaki sauce, sesame oil, rice vinegar, ginger, and garlic powder. Marinate for at least 15 minutes.
  • Heat a large skillet or non-stick pan over medium-high heat. Add the marinated chicken and cook for 8-10 minutes, stirring occasionally, until chicken is cooked through and sauce has thickened.
  • While chicken cooks, slice slider buns in half. Lightly toast buns if desired.
  • Spread mayonnaise on the bottom halves of the buns. Top with shredded lettuce.
  • Spoon the cooked teriyaki chicken onto the lettuce. Garnish with sliced green onions.
  • Place the top halves of the buns and serve immediately.

Notes

Serve on Hawaiian rolls with a slice of pineapple or a sprinkle of sesame seeds. For a spicier kick, add a dash of sriracha to the teriyaki sauce. Can be made with leftover cooked chicken for even quicker prep.
