Ingredients
- 1 lb ground beef
- 1 tbsp olive oil
- 1 medium onion
- 2 cloves garlic
- 1 packet taco seasoning
- 1 cup water
- 1 can diced tomatoes
- 1 can black beans
- 1 cup corn
- 1/2 cup shredded cheddar cheese
- 1/4 cup fresh cilantro
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add ground beef and onion, breaking up the beef with a spoon. Cook until beef is browned and onion is softened, about 5-7 minutes. Drain any excess grease.
- Stir in minced garlic and cook for 1 minute more until fragrant.
- Add taco seasoning and water. Bring to a simmer and cook for 2-3 minutes, allowing the sauce to thicken slightly.
- Stir in diced tomatoes, black beans, and corn. Cook for another 5-7 minutes, until heated through and flavors have melded.
- Remove from heat. Sprinkle shredded cheddar cheese over the top, cover the skillet, and let sit for 2-3 minutes until the cheese is melted and gooey.
- Garnish with fresh cilantro and serve immediately with your favorite taco toppings.
