Ingredients
  

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 medium onion
  • 2 cloves garlic
  • 1 packet taco seasoning
  • 1 cup water
  • 1 can diced tomatoes
  • 1 can black beans
  • 1 cup corn
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup fresh cilantro

Instructions
 

  • Heat olive oil in a large skillet over medium-high heat. Add ground beef and onion, breaking up the beef with a spoon. Cook until beef is browned and onion is softened, about 5-7 minutes. Drain any excess grease.
  • Stir in minced garlic and cook for 1 minute more until fragrant.
  • Add taco seasoning and water. Bring to a simmer and cook for 2-3 minutes, allowing the sauce to thicken slightly.
  • Stir in diced tomatoes, black beans, and corn. Cook for another 5-7 minutes, until heated through and flavors have melded.
  • Remove from heat. Sprinkle shredded cheddar cheese over the top, cover the skillet, and let sit for 2-3 minutes until the cheese is melted and gooey.
  • Garnish with fresh cilantro and serve immediately with your favorite taco toppings.

Notes

Serve with your favorite taco toppings like shredded lettuce, diced tomatoes, sour cream, avocado, or salsa. For a spicier kick, add a pinch of cayenne pepper or a chopped jalapeƱo with the onions. This dish is also great for meal prep!
