Ingredients
- 1 lb sushi-grade ahi tuna cubed
- 1/4 cup soy sauce
- 2 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 tbsp sriracha or to taste
- 1 tsp grated fresh ginger
- 1/4 cup green onions chopped
- 1/4 cup toasted sesame seeds
- 2 cups cooked sushi rice for serving
- 1 avocado sliced for topping
- 1/2 cup shelled edamame for topping
- 1/2 cup diced cucumber for topping
- 1/4 cup nori strips for topping
Instructions
- In a large bowl, gently combine the cubed ahi tuna, soy sauce, sesame oil, rice vinegar, sriracha, and grated fresh ginger. Stir gently to coat the tuna without breaking it apart.
- Add half of the chopped green onions and gently mix. Cover the bowl and refrigerate for at least 15 minutes to allow the flavors to meld.
- Divide the cooked sushi rice evenly among two serving bowls.
- Spoon the marinated poke mixture over the rice in each bowl.
- Arrange the sliced avocado, shelled edamame, diced cucumber, and nori strips as toppings over the poke.
